Price to make: $4.67

Yield: Bundt pan

Time: Prep – 15 minutes, Cook – 55 minutes

2 1/4 cups flour

1 3/4 cups sugar

2/3 cup cocoa

2 tsp coffee

1 tsp baking powder

1 tsp baking soda

3/4 tsp salt

3 eggs

1 1/2 cups water

1 1/4 cup cup oil

  • Mix all ingredients well, and then slowly add oil.
  • Pour into Bundt pan and bake at 350 for 45 minutes, then lower oven to 325 and bake for 15 minutes more.

Topping

1/2 small jar of marshmallow fluff

8oz whip topping

  • Mix topping ingredients.
  • When cake has cooled, spread topping over cake.

Tips: For the coffee mix a little bit of hot water with the granules to dissolve them. For the topping, first melt the marshmallow fluff in a pan and pour over cake. Whip up the whip topping and pour over once all is cooled. This cake tasted really good! But I do think it would be better if you would slice it in half and put the marshmallow fluff in middle and only the whipped topping on top.

Price to make: $3.47

Yield: 9x13 pan

Time: Prep – 7 minutes, Cook – 40 minutes

1 cup oil

4 eggs

2 1/2 cups sugar

2 tsp baking powder

2 tsp baking soda

1 tsp vanilla

3 cups flour

2 cups made coffee

1 cup cocoa

  • Mix all ingredients.
  • Pour into 9x13 pan and bake at 325 for 35 minutes.

Tips: This cake was extremely dry and tasted like it had no sugar at all. It definitely needed some kind of topping like whipped cream or something.

S5031207

Price to make: $2.71

Yield: 12 muffins

Time: Prep – 5 minutes, Cook – 20 minutes

1 cup sugar

2 jars baby food carrots

1/2 cup oil

1 1/2 cups flour

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

2 eggs

  • Mix all ingredients.
  • Pour into greased muffin tins and bake at 350 until brown on top.

Tips: Do not over mix, meaning mix until ingredients are just combined in order to get the smooth look on top. You can use muffin cups instead of spraying the muffin tray and then having to clean it after.

These muffins are really great tasting! Whether you like muffins, carrots, or just something with your coffee, make this recipe.

S5031205

Price to make: $2.56

Yield: Bundt pan

Time: Prep – 5 minutes, Cook – 1 hour

4 jars baby food carrots

4 eggs

1 cup oil

2 cups flour

1 tsp salt

1 cup sugar

1 tsp baking powder

1 tsp baking soda

2 Tbsp vanilla sugar

  • Mix all ingredients.
  • pout into greased Bundt pan and bake at 350 for an hour.

Tips: This recipe originally is supposed to be for  muffins but I decided to turn it into a bundt cake. It ended coming out with a consistency and sweetness of a kugel. Instead of using the baby food I took a can of diced carrots and blended it till it was smooth.

The topping is a mixture of confectioners sugar, cinnamon and water. I was trying to salvage it as a cake.

Price to make: $3.85

Yield: 9x13 pan

Time: Prep – 5 minutes, Cook – 40 minutes

2 cups flour

1 cup light brown sugar

1/c cup white sugar

1/2 cup finely chopped chocolate chips

1/2 cup shortening

1 1/4 cup coffee rich

1 tsp salt

1/2 tsp baking soda

1 1/2 tsp vanilla sugar

3 eggs

1 tsp baking powder

  • Mix all ingredients.
  • Pour into 9x13 inch pan and bake at 350 for 40 minutes.

Tips: This cake can be made in a bundt pan if you would like. I don’t have the equipment to chop up chocolate chips so I put them in whole and it was fine. Shortening means Crisco shortening.

Price to make: $14.24

Yield: Trifle Bowl

Time: Prep – 22 minutes, Cook – 35 minutes

1 box Duncan Hines brownie mix

  • Follow box directions and bake in two 9 inch round pans.

1 1/2 cups marshmallow fluff

2 1/2 bars Rosemarie chocolate

1/2 cup coffee whitener

8oz whip topping

  • In a trifle bowl, place one layer of brownie cake, followed by a layer of the mousse and then a layer of whipped topping.

Tips: To make the mousse, break up the chocolate and place in a pot with a low flame. Once melted add coffee whitener and then marshmallow fluff. Keep mixing until a smooth consistency. Cool off before pouring into the trifle bowl or it will melt the whipped topping.

Price to make: $5.25

Yield: Bundt pan

Time: Prep – 10 minutes, Cook – 1 – 1 1/2 hours

1 stick margarine

1 cup orange juice

2 tsp baking powder

3 cups flour

1 tsp vanilla sugar

1 egg

1 1/2 cups sugar

1 cup fresh blueberries, or as desired to taste

  • Cream margarine, then add rest of ingredients except for blueberries and mix well.
  • Add blueberries by hand.
  • Pour into Bundt pan.

Topping:

1 Tbsp margarine

1/2 tsp cinnamon

2 Tbsp flour

2 Tbsp sugar

  • Combine topping ingredients and sprinkle on top.
  • Bake at 350 for 1 – 1 1/2 hours

Tips: DO NOT MAKE THIS RECIPE. I think there was probably some kind of misprint in the book or something because the cake came out extremely dense and not good tasting. I'm guessing too much flour and the egg amount.

Instead of using fresh blueberries you may also use frozen as its a little cheaper. I think softening the margarine in the microwave or a pan may help also as creaming it does not make it soft.

72055_436864253229_666673229_5199397_3654571_n

Price to make: $3.07

Yield: 9x13 pan

Time: Prep – 5 minutes, Cook – 30-35 minutes

1 stick margarine

3/4 cup sugar

3/4 cup brown sugar

2 eggs

1 package vanilla sugar

1 tsp baking soda

pinch of salt

2 1/2 cups flour

6oz chocolate chips

  • Cream margarine, and then mix rest of ingredients by hand. Mix Well.
  • Pour into greased 9x13 pan and bake at 350 for 35 minutes.

Tips: If you want to use a non-disposable pan then just put parchment paper on the bottom for a mess-free cake. I advise to check the cake after 30 minutes to see if it needs another 5 minutes or not. Cut into squares 5 minutes after its out of the oven while its still soft.

33598_436493328229_666673229_5192327_4216477_n

Price to make: $3.73

Time: Prep – 20 minutes, Cook – 40 minutes

4-5 cortland apples, grated

1 cup brown sugar

1/3 stick margarine

1/2 tsp cinnamon

1/4 tsp salt

juice of 1 lemon

1 package vanilla sugar

2 Tbsp flour

1 package flaky dough

  • Boil first seven ingredients in a pot.
  • After ingredients are boiled, add flour.
  • Mix Well.
  • Let Cool.
  • Fill rolled-out dough.
  • Roll dough into a log and brush top with egg.
  • Bake at 425 for 10 minutes, and then lower to 350 for 30 minutes.

Tips: I've never used flaky dough or made a strudel before so i had to make it up as i went along. As you can see in the picture it did not come out well so I'll tell you what i did and you can make your own decision from that. The flaky dough came in 2 sheets so i only used one. I rolled it out into a long rectangle. Then spread the boiled mix across the whole thing, as i do not have to much patience i didn’t let the boiled mixture cool that much. I then rolled the dough at both ends to meet on top, what i probably should have done is roll it again the so dough would be tucked and not open up like it did in the picture.

Vanilla Sugar: I was not able to find packets of vanilla sugar so i bought the 12oz container. So 1 packet ends up being 8g and 1 tsp is 5g so a packet is a tad bit more than 1 and a tsp.
